For Cottage cheese Pattie ::
1 & 1/2
Paneer or cottage cheese
All purpose flour
1 & 1/2
for deep frying
For rabri ::
full fat milk
Cashew nut powder
Heat the oil in a big wok.
Mash the cottage cheese with your hand. Add semolina,flour & cardamom powder to it. Rub well
Now start kneading the entire mixture with your palm till its becomes soft and palm looks oily.
Add powder sugar and eno ,mix well.
Add condensed milk mix well.
Grease your palm in little oil and make equal roundels. Flatten a bit and deep fry the patties.
Deep fry these till both sides turns golden brown in colour.
Take out the patties and keep on absorbent paper.
Pour the milk into a heavy bottomed pan and boil it.
Stir continuously ,so that it won’t stick to the bottom of pan.
When it is reduced by 3/4th add powder cashew nut,almond powder, powdered cardamom and sugar. Mix well.
Boil for 2-3 minutes more and switch off the gas.
Wait till it cool a bit.
Add the fried patties to it and leave it for one day.
Enjoy the delicious sweet dish on next day.
After kneading and before frying if the mixture seems too watery add little more semolina to adjust the consistency.
After dipping the patties in reduced milk ,the patties will expand a bit.
if you don’t want to add eno (Indian name of fruit salt) you can add little baking powder .
