  1. Wash and soak basmati rice for 30 minutes.
  2. Slice the onion and chop the tomatoes.
  3. Cut all the vegetables into medium cubes and set aside.
  4. Heat oil and ghee in a heavy bottom pan, add whole spices, cook them until fragrant.
  5. Add sliced onion , fry with 2 pinches of salt.
  6. Fry till onion turns golden , make sure not to burn them.
  7. Add ginger garlic paste and fry.
  8. Add all the dry masalas and cook for a minute more.
  9. As soon the masala leaves oil throw chopped Tomatoes and mix with the masala.
  10. Cover it and let the tomato be mushy .
  11. Add chopped vegetables one by one along with salt.
  12. Cook for 1-2 minute with lid on so that vegetables will absorb salt and the flavor of the spices.
  13. Add drained rice mix with the masala & vegetables .
  14. Pour 3 & 1/4th cup of water and let it boil.
  15. At this stage add crushed kastoori methi, mix with a flat spoon, cover with a lid.
  16. Simmer the gas flame and cook till rice absorbs all water and became fluffy.
  17. Let it sit for 5 minutes, squeeze lemon juice , add chopped coriander leaves and serve hot with raita.
Recipe Notes
  • This pulao can also be prepared with mustard oil .
  • Add slit green chillies while frying onions ,  it increases the taste.
  •  I prefer soft rice grains so  added 3 & 1/4th cup water ,you may use 3 cups of water.
