The auspicious festival holi is now over.. I am sure… all my viewers had a lot of fun . We also celebrated holi with mawa gujhiya , thandai and green pea kachori . Yes of course without colour. Didn’t find gulal in Tamilnadu ,so celebrated only with food and flowers.
After making lot of things for Holi, hubby said no more dessert for next one month. So I thought to make a quick, one pot meal which will be filling and equally yummy too. There are many Variety of Indian rice which can be prepared with only using one pot. Remember last time I prepared Tomato rice, as I never repeat dishes so thought to make Tahiri this time.
Tahari is an North Indian delicacy and a part of an Awadhi cuisine. Tahiri or Tahari is very similar to pulao recipe. But its tastes very different . Taheri is yummy, delicious, flavorful comforting one pot meal which is filling and easy to cook. This is a dish which can be prepared in minimum time.
This dish can be prepared in a pressure cooker and in an open pot too. Usually Taheri is a winter delicacy because all types of vegetables are available in this season. This dish carries a lot of flavors as well as vegetables. Any day when you feel lazy and thinking about any filling dish then this is the dish which can be an attraction of your dining table.
Taheri itself made with many variety like aloo ki tahiri, aloo gobhi ki tahiri or murg ki tahiri. As winter is going on I ve added a lot of winter vegetables with this. Taheri can be served with a simple boondi ka raita or cucumber raita even with pain curd. Serve the delicious Tahiri drizzled with lemon juice . It will add more tanginess .lets go to the recipe.

- 1 & 1/2 cup Basmati Rice (any rice can be used)
- 1 cup Potato (medium cubed)
- 3/4th cup French beans
- 1 cup Curliflower
- 3/4th cup Green peas
- 3/4th cup carrot
- 2 big no Onions
- 2 tbsp ginger garlic paste
- 3 no Tomatoes
- 3 tsp coriander powder
- 2 tsp cumin powder
- 3 tsp Red chilli powder
- 1 tbsp Kastoori methi
- 1/2 tsp turmeric powder
- 1/2 tsp lemon juice
- to taste salt
- 3 tbsp ghee
- 1 tbsp oil

- Wash and soak basmati rice for 30 minutes.
- Slice the onion and chop the tomatoes.
- Cut all the vegetables into medium cubes and set aside.
- Heat oil and ghee in a heavy bottom pan, add whole spices, cook them until fragrant.
- Add sliced onion , fry with 2 pinches of salt.
- Fry till onion turns golden , make sure not to burn them.
- Add ginger garlic paste and fry.
- Add all the dry masalas and cook for a minute more.
- As soon the masala leaves oil throw chopped Tomatoes and mix with the masala.
- Cover it and let the tomato be mushy .
- Add chopped vegetables one by one along with salt.
- Cook for 1-2 minute with lid on so that vegetables will absorb salt and the flavor of the spices.
- Add drained rice mix with the masala & vegetables .
- Pour 3 & 1/4th cup of water and let it boil.
- At this stage add crushed kastoori methi, mix with a flat spoon, cover with a lid.
- Simmer the gas flame and cook till rice absorbs all water and became fluffy.
- Let it sit for 5 minutes, squeeze lemon juice , add chopped coriander leaves and serve hot with raita.
