Hello folk!!
Hope all my readers are doing good… I am returning back almost after 2 months. When we take a lot of stress and a bunch of work load then life becomes exhausted . Then we all need a short break to bring back our lost energy. So here I am again after a short break.
This time I specially came here to write up for our Healthy wellthy group. It’s a long gap for our blog hop too. If Blog hop will not be there I never ever can think to continue blogging. This time our theme is something different and we decided to bake for Christmas but not a classic rich fruit cake. We are baking something by giving a touch of any fruit.
After thinking a lot I decided to make lemon loaf by adding dried blueberry, tutti frutti and coconut powder. This cake is extremely moist, soft and delicate. This has a naughty lemon flavor. You can feel the taste of blueberry and tutti frutti in every bite . Ultimately this is a loaded pillow soft cake which is something different to celebrate this Christmas.
Of course Christmas is a time for baking. Whether you are making classic plum cake, fruit cake or various type of cookies, don’t spend too much time to select a perfect recipe to bake. Instead pick this one blindly . It will definitely be a show stopper .This super exciting cake is enough to impress your guests over the festive season.

- 1 cup All purpose flour
- 1/2 cup castor sugar
- 1/2 cup-2 tbsp oil
- 1/2 cup curd
- 2-3 tbsp Milk
- 1/2 cup dried Blueberries
- 2 tbsp Tutti frutti
- 1 & 1/2 tsp Baking powder
- 4 tbsp Dessicated Coconut
- 1/2 tsp Lemon essence
- 2 tbsp lemon juice
- 2 tsp Lemon zest
- 1/8th tsp salt

- In a bowl mix tutti fruit and blueberry with little flour and keep aside.
- Grease an 8” loaf with oil and dust with flour.
- Preheat the oven at 180c for 10 minutes.
- Sieve flour, salt and baking powder all together.
- Beat oil and sugar in medium speed till sugar melts.
- Add essence, curd , milk, lemon zest and beat for a minute more.
- Gradually add flour, coconut powder and mix in low speed carefully. Avoid overbeating.
- Add lemon juice and mix for a second.
- Add flour coated blueberry n tutti frutti .Fold gently.
- Pour the cake batter on the greased tin, tap a little to release air bubbles.
- Bake in preheated oven for 40 minutes.
- Check with a tooth pick, it should come out clean if cake is fully done.
Replacements:
- Place few blueberries on top.
- Can avoid adding tutti fruit.
- Almonds can be added instead of tutti frutti.
- Instead of curd, add 2 large eggs,
- Vanilla essence can be added instead of lemon essence.

I am really tempted by this recipe, I want to make it in the next few days, can i increase the quantity of coconut and skip blueberries…? Thank you in advance
Glad you liked the recipe. Yes you can increse the amount of coconut by 4 tbsp only and can skip adding blueberries n tutti fruitti.
