Fruit cake can’t be avoided when it’s the time to welcome Santa . There is a lot of variety of fruit cake available in markets. But making own at home has its own pleasure. I always scared to try Christmas fruit cake. I have tried 3 times before this one and the result was horrible. But this time I decided not to soak any dry fruits before. Instead I ll do something which can be prepared instantly.
Last minute rush for making Christmas cake??? Worry not, we still can prepare a classic, non alcoholic Christmas fruit cake. Let’s prepare this without delaying more.

- 1 & 1/4th cup All purpose flour
- 1 cup brown sugar
- 1 stick butter (100 gram)
- 2 no Eggs (large)
- 1 tsp All spice powder
- 1 heaped cup Mixed Fruits & nuts
- 1 tsp Vanilla essence
- 1/4th tsp Baking Soda
- 1/4th tsp Baking powder
- 1/4th tsp salt
- 1 cup water
- 1/3rd cup Milk

- Chop all the fruits and nuts
- Boil the fruit & nuts with 1 cup of water for 5 minutes.
- Rest it for 15 minutes till the mixture completely cool down.
- Preheat the oven at 160c for 10 minutes.
- Meanwhile, line two 8” loaf with parchment paper.
- Sieve all purpose flour, salt, baking powder, baking soda and spices for 3 to 4 times.
- Cream butter and brown sugar in medium speed till the mixture seems creamy.
- Add essence and eggs one by one.
- Beat for 2-3 minutes.
- Add milk and mix well.
- Add sifted dry ingredients in 3 parts and mix well but don’t over beat.
- Add boiled fruits along with water (if left).
- Fold carefully.
- Transfer it to greased mold and bake in preheated oven for 45 minutes.
- cool the cake for 20 minutes. demold and enjoy !!!
- In dried fruit and nut mix you can use cashew nuts, tutti frutti, cherry, golden raisins, dark raisins, walnut, almonds, dates, dried strawberry/cranberry/ apricots/ kiwi/pineapple/blueberries etc.
- instead of all spice powder you can use 6 cloves, 1/4th of nutmeg, 6 green cardamoms, 1/2" dried ginger, 1" cinnamon, grind this and make powder.
