For Halwa
For Mousse :
  1. First we ll make carrot halwa.
  2. For making halwa, take a heavy bottom pan, heat ghee.
  3. Fry the chopped nuts and set aside.
  4. In the same ghee sauté carrot till all the moisture evaporate.
  5. Add milk, give a nice stir.
  6. Cook in low flame till it becomes dry.
  7. Add powdered cardamom, sugar and condensed milk.
  8. Mix well and cook for some more time, till the halwa leaves side of the pan and become a mass.
  9. Leave the halwa aside and leave it to become cool.
  10. Now come to the whipping cream.
  11. Take cream in a chilled bowl. Beat in high speed till it forms a stiff peak.
  12. Add cardamom powder along with prepared carrot halwa. Fold gently.
  13. Pour into individual glasses, else you can pipe it, using a piping bag.
  14. Add crushed nuts and rest in refrigerator for 1 hour.
  15. While serving garnish with nuts/rose petals or caramelized fig.
  16. Serve chilled.
