The summer is everywhere with full bloom, but in our place,being an hilly area, we can still feel little relief with a slight low temp between 30-35 degree at peak hours. The weather is perfect to go for a picnic and enjoy the blast of beautiful nature. I am bursting with many food ideas ,those can be loaded with my picnic basket.The interesting food ideas which can be enjoyed by kids and elders both.
Its the time for Foodie Monday blog hop and we are gathered to share some picnic food ideas. Picnic ,the word itself,can bring smile to many. Picnic can be enjoyed anywhere, in a sandy beach, a beautiful park or just a fresh green stretch near our house.On the day of Picnic enjoyment continues till the sun is shining and butterflies are fluttering.
Paneer tikka is a north Indian snack or starter which is very popular and available almost in every resturant. Tikka is prepared by marinating the paneer cubes and veggies with curd and some spices.These are grilled in tandoor, that’s why it is named as tandoori tikka. It is really aromatic and flavourable.
Wraps and Frankies are very popular nowadays. These are very easy to prepare and yummy , also a massive hit among children. The kids love to have franki in their tiffin box. Then who will refuse paneer tikka kathi roll. Paneer tikka kathi roll is also a popular street food and elders are also becoming fan of these yummy kathi rolls now a days. The kathi rolls are just perfect for picnic mood, specially when the kids are around you. The flovour will be enough to mesmerize & satisfy the tooth bud.
These kathi rolls are delicious and easy to make, easy to serve,single dish meal. So whenever you are planning to go for picnic do not forget to make it and take it in your picnic basket .
For roti ::
All purpose flour – 1 cup
Salt – ½ tsp
Oil- 2 to 3 tsp
Milk – for kneading
For stuffing ::
Paneer -250 gram
Capsicum – 1 large
Tomatoes –2 medium no
Onion – 2 large
Hung curd –6 tbsp
Salt – 1 tsp
Kashmiri Chilli powder- 2 tsp
Ginger garlic paste –1 tbsp
Lemon juice-1 tsp
Gram flour – 1 tbsp
Kastoori methi- 1 tsp
Pepperb powder- ½ tsp
Chat masala –1/2 tsp
Cumin powder –1 tsp
Corainder powder-1/2 tsp
Garam masala – ½ tsp
Turmeric powder – ½ tsp
Oil – 1 tbsp
For serving ::
Little lemon juice
METHOD OF PREPARATION ::
Take all purpose flour, salt and mix a little. Add oil and mix with fingertips.
Gradually add milk and knead into a soft dough.the dough should be a little stiff and not too soft .
Cover it and rest it for ½ an hour.
de-seed the capsicum and tomato, cut them into squared.
Also cut the onions into squared.
Take curd and all the masalas in a bowl, whip it well .
Add cubed paneer , capsicum , tomatoes and onion. Mix well with hands.
Rest it in refrigerator at least for an hour.
After the resting time is over take out dough and make equal dumplings from it and roll in a floured surface .
Make roties as thin as possible.
Heat a tawa or dosa tawa,cook the thin roties till they are 3/4th cook.cook on high flame ans wait till the brown spots to appear,then turn it and cook the other side too.
Don’t cook the roties completely ,otherwise they will turn tough and dry.
We will cook the roties after rolling so don’t panic.
Now be ready to prepare tikka.
Tikkas can be cooked in tandoor but I prefer to cook them in gas flame.
So heat a non stick tawa/ pan, drizzle oil all over.
Assmble the paneer, capsicum, tomatoes and onion in a skewer or toothpick.
First tomatoes, onion, then paneer, then capsicum, or whatever order you prefer, it does not matter.
Now place the sticks on the hot oil and cover it, wait for 1 minute when one side turns light brownish in colour.
Turn it and cook the other side.
When all sides are done, remove it from tawa and keep aside.
Repeat these steps with remaining tikkas.
Assembling the tikka ::
I am going to share two methods of assembling.
When you are ready to serve , slightly reheat the chapaties on high flame for few seconds, place on a plate, then place one stick of paneer tikka in the center, add few laccha onion and roll tightly.
Place a toothpick in the center so that the rolls willl not open while serving.
Otherwise, reheat the roties on high flame for few seconds, place them on a plate, apply green chutney, then sprinkle some lacha onion, place one stick of tikka in the center.
Fold the bottom part of the roti and roll the sides, fold tightly .
You can wrap a aluminum foil/tissue paper/butter paper on the roll and serve it.
