Hara bhara kabab is a most popular north Indian snack loaded with lot of greens like spinach , fenugreek, green peas and coriander. This kabab is named as Hara bhara kabab because of its look. The bright green colour kabab, not only looks good but also very nutritious.
On our 32nd foodie Monday blog hop, we all decided to choose one colour to celebrate the occasion of Holi. I choose green , but my mind was blank as what to make. I really don’t want to make a mocktail.
This is one of the recipe , I have been thinking of making since long time. So I chose this two green colour recipe , hara bhara kebab and green pea hummus.
This yummy looking kababs taste crunchy while serve immediately after frying. It can be made in various ways, people added many green colour ingredients to make it more delicious.
This is the best way to add nutrition in our diet. These are perfect energy booster snacks, which can served to both elder & younger, even these are perfect for kids tiffin box.This can also be a part of our daily meal or a party appetizer.
These kebabs are prepared with easily available ingredients and can be prepared within 20 minutes.
I shallow fried these kababs but this can be deep fried, baked and fried in appe pan. Some crushed cornflakes or bread crumbs can be coated with these kebab to make these more crunchy. Chopped cashew nut pieces will enhance the taste while taking one bite of it.
Boiled potato – 2 medium
chopped spinach – 1 & ½ cup packed
chopped fenugreek leaves – ½ cup
Green peas – 3/4th cup
Crumbled paneer – ½ cup
Coriander leaves – 2 tbsp
Chopped Cashew nuts – 2 tbsp
Roasted gram flour – 2 tbsp
Onion – 1 medium
Green chili – 2 no
Garlic – 2 cloves
Ginger – 1” piece
Turmeric powder – 1 pinch
Garam masala – ¾ th tsp
Roasted jeera powder – ½ tsp
Lemon juice- ½ tsp
Salt – to taste
Oil- for shallow frying
Few more cashew nut slices for garnishing
METHOD OF PREPARATION ::
Prepare the paste of ginger and green chilli.
Blanch the green pea with little salt.
Blanch the spinach with little sugar, immediately wash with cold water.
Soak the fenugreek leaves in salt water for 10 minutes, then blanch it and wash the greens with cold water.
Finely chop the garlic and onion. Keep aside.
Squeeze the water from the fenugreek and spinach, grind these with coriander leaves and make a paste out of it.
Mash the green peas or coarsely grind it. Keep aside.
Mash the potato in a bowl , add chopped cashew ,crumble paneer,mashed peas, grinded green and all the powder masalas.
Mix well and form Pattie out of it.You can make any shape, I like flat roundels like tikki.
Place one cashew slice in the center of the kebab, set aside.
Heat oil in a wide pan and slide prepared kebabs one by one.
Don’t fry much otherwise the kebabs will loose their colour.
I didn’t use bread crumbs or cornflakes , but it can be used.
Little fennel powder will give a very nice flavor.
Instead of Roasted gram flour, corn flour or 2 bread slices can be used,. Cut the crust of the bread and break into small pieces , mix with mashed ingredients.
These patties can be deep fried and can be fried in paniyam pan too.
If you want to avoid cashew nut pieces then it won’t make much differences.
Instead of fenugreek leaves , roasted green capsicum can be used.
GREEN PEA HUMMUS::
Usually the Hara bhara kebabs are served with mayo, tomato ketch up, date tamarind chutney or spicy tomato chutney. But I made the easy green pea hummus, just to make the theme green.
Again the hummus is served with pita chips, tortillas or crackers. But this easy to make green peas will go with any Indian snack .
Usually the hummus is made from chickpeas. Some added green peas with chickpeas and made green pea hummus. Some added mint to give it more flavorful.
The green pea hummus is easy and can be made instantly. Whenever you want to have hummus and don’t have soaked chickpeas, this can be used as a sandwich spread or burger spread.
And the interesting thing is, it is packed with goodness of green pea. So let’s make the easy green pea hummus.
Fresh or frozen green peas – 1 cup
Garlic – 2 clove
Tahini – 2 tsp
Olive oil- 3 tbsp
Lime juice – 2 tbsp
Crushed black pepper – 1/8th tsp
Salt – to taste
PREPARATION PROCEDURE ::
Blanch the green peas with little salt for 5 minutes & Wash it under cold water.
Or if you are using frozen peas then soak it in warm water for 5 minutes.
Take all the ingredients in a food processer and pulse it until they turn smooth.
