Among the world’s healthiest vegetables, spinach comes at the top, because of its nutrient richness . The bright, vibrant looking spinach leaves are more nourishing and a source of vitamins , minerals to the body.
Spinach leaves are very appealing to eyes . the delicate and alive spinach leaves look very beautiful when they are placed in a kitchen counter. Reseach says each 180 gram of spinach supply 105 % of vitamin A, 987 % of vitamin k, 24% of vit C and 36% of iron and many more.
Spinach is the leafy vegetable which kids generally refuse to eat. But it is a must have vegetable which has to be a part of daily diet. Spinach is very versatile , this can be added to salads, soups, dips and pastas.
This leafy vegetable can be eaten in raw and cooked form. Raw spinach contains Oxalic acid. Where cooked spinach helps the body to absorb the higher level of vitamin A , K, Fiber and Calcium.
Whether you eat spinach in raw form or cooked form , it provide iron to our body. So always pick fresh picked and bright green colour spinach leaves as pale in colour leaves cointain lower concentration of nutrients
Here I am sharing a healthy dish using cottage cheese and spinach , it can fit in kids tiffin boxes as well as elders can enjoy it in snack and breakfast. This is also my first contribution towards healthy wellthy bloghop, in which theme is Vitamin A.
- Whole wheat flour – 1 cup
- Spinach – 1 & ½ bunch
- Ginger – 1/2 “ piece
- Salt – ½ tsp
- Oil – 3-4 drops
Cottage cheese pattie::
- Cottage cheese (grated) – 1 & ¼ th cup
- Boil potato – 3 medium size
- Or boiled grated potato – 1& ½ cup
- Garam masala –1 tsp
- Coriander powder- 1 tsp
- Chilli powder- 2 tsp
- Turmeric powder- ¼ tsp
- Chat masala – ¼ tsp
- Amchoor powder – ½ tsp
- Lemon – 1 tbsp
- Chopped spinach leaves – 2-3 tbsp
- Chopped green pepper – 2 tbsp
- Chopped coriander leaves –2 tsp
- Onion – 1 no
- Oat – 1 tbsp
- Salt – to taste
- Oil – for shallow frying
For serving ::
- Mayonnaise – ¼ th cup
- Tomato ketch up- as required
- onion – 1 big (Finely sliced)
- Lemon juice
METHOD OF PREPARATION ::
Wash spinach leaves and strain it. make puree of spinach leaves using a piece of ginger.
Combine whole wheat flour, salt and spinach puree in a mixing bowl.
Gradually add water and knead into a soft dough.
Finally drizzle oil and mix with the dough.
Cover it and set aside.
In a mixing bowl combine grated paneer, grated potato, oat , finely chopped onion, chopped spinach leaves, coriandef leaves, capsicum, lemon juice and all the dry masalas (chilli powder, turmeric, amchoor powder, chat masala, coriander powder and salt).
Combine well and divide into equal size ball.
Heat oil in a frying pan.
Take each ball, flatten a little , shape like tikki.
Shallow fry in hot oil till both side turn golden in colour.
Be very careful while flipping the pattie, the tikkies are very delicate and soft.
You can fry these tikki in a tawa using little oil.
Fry all the patties and set aside.
Take the dough , knead it again.
Heat a griddle/ tawa.
Take a big lemon size ball, roll it using dry whole wheat flour(like we are making chapati).
Don’t make too thin, roll like we make regular chapati.
Place this spinach chapati on the hot tawa, cook both sides.
Let the brown spot appear on both the sides.
Take it out and make chapaties with rest of the dough.
Take a spinach chapatti, spread mayo and finely chopped onion, lemon juice.
Place a tikki then add tomato ketch up.
Roll the wrap and serve.
