I always buy bananas for my kid. But she doesn’t like the taste of bananas, even she hates banana shake. This recipe specially dedicated to my kid, who loved the banana bread which infused with the flavor of cinnamon the mild taste of coffee.
I have been busy perfecting this recipe, as I don’t like the soft centered banana bread.but now I am here with my perfect fluffy Banana Bread.this Banana Bread is healthiest version of Banana Bread, because it is made of banana and Whole Wheat. And the grace is it is egg less, a perfect treat for vegetarian people.
INGREDIENTS ::
Whole Wheat flour – 1 cup
Bananas – 2 ½ no
Powder sugar – 1 cup
Curd – ½ cup
Milk -1/4th cup
Oil – 1/4th cup
Baking powder – 1 ½ tsp
Coffee – 2 tbsp
Cinnamon powder – ½ tsp
Vanilla essence – ½ tsp
Salt – 2 pinches
METHOD OF PREPARATION ::
Chop the bananas into small pieces and mash them using a fork.
Grease a loaf with oil or place parchment paper and keep it ready . Keep aside.
Preheat the oven at 180’c for 10 minutes.
Sieve whole wheat flour with coffee, baking powder, cinnamon powder and salt.
Cream oil and powder sugar till its turns creamy and fluffy.
Add curd, vanilla essence and whip it well.
Add milk and mashed banana,whip it for few second.
Now add sieved dry ingredients, fold it well.
If the mixture seems very dry add little more milk.
Pour this batter into prepared loaf and tap it well.
Bake it at preheated oven for 45 minutes at 180’c or till the toothpick comes out clean.
After baking , cool the cake, de mold it and cut into pieces.
NOTES ::
- Milk quantity is depend on the quality of the flour.
- Check the cake after 30 minutes of baking.
