Vanilla panna cotta with beetroot pineapple coulis

 

Panna cotta is a creamy Italian dessert. It’s a creamy, yummy and melt in mouth dessert. The cream is sweetened and molded with the help of gelatin.  It’s easy, quick and foolproof. It’s a kind of basic pudding and a show stopper.

 The word panna cotta means cooked cream. You can have panna cota directly from the pot. But its often un-molded onto a plate and drizzled with sweet sauce.

Normally panna cota is unmolded just before serving. You can set the dessert in individual ramekins or silicon cups.

INGREDIENTS ::

 Full fat milk – 1 cup

Double cream – 1 cup

Gelatin – 3 tsp

Warm water – 2tbsp

Sugar – 4 tbsp

Vanilla extract  – 1 tsp

Salt – a pinch

METHOD OF PREPARATION ::

Keep the moulds ready in which you will set your panna cota.

Dissolve the gelatin in warm water and stir well to mix the gelatin well.

Rest it for 5 minutes.

In a pan take double cream & milk, transfer the mixture to gas flame and bring to a simmer.

Add sugar, salt and stir well.

Ensure that it should not boil, remove when you see bubbles on the top of the mixture.

Remove from the heat and add vanilla extract. Give a mix.

Add soaked gelatin to the above mixture and gently stir the mixture to mix the gelatin.

Pass this mixture through a sieve to make the panna cota extra smooth.

Put this mixture into individual molds or ramekins or glasses and let it come to room tempeture.

Refrigerate it for 4-5 hours or overnight.

Beetroot & pineapple coulis::

INGREDIENTS ::

Blanched beetroot puree – ½ cup

Pineapple puree – ½ cup

Sugar – 3 tbsp

METHOD OF PREPARATION ::

Take beetroot puree, pineapple juice ,sugar and boil it.

Simmer it and Stir occasionally.

After 3-5 minutes it will become thick.

Cool it.

At the time of serving, demold the panna cotta in a plate drizzle the coulis over it and serve.
