Kulfi is a popular form of indigenous ice-cream. It is a frozen dairy dessert. It is not only popular in India but also all over the world. Its creamy texture and rich taste is heavenly.
Kulfi is prepared by evaporating sweetened milk combined with various flavors. Usually full fat milk is reduced to half or one fourth of the original quantity, then it is frozen in tightly sealed mould till it is settled well. Few kulfies are settled in earthen pots which is called mathka kulfi.
Nowadays various shortcut methods are available for making kulfi which take less time. For thickening the milk, mawa or bread pieces or cottage cheese or condensed milk is used. Process may vary but the creamy texture is still retained in the kulfi.
