Shrikhand is a popular sweet dish from the state of Gujarat. It can be served either as a sweet dish or a side dish in Gujarat. In a traditional Guajarati family shrikhand is a must have dish on daily basis.

In Gujarat ,shrikhand is a must served item in each thali in restaurants. Festivals and special occasions are incomplete without shrikhand. A variety of flavors , dried fruits, fresh fruits and even berries also can be added to the shrikhand to get a new flavor .

Shrikhand is served chilled as hung curd is the main ingredient or we can call it as a base ingredient. Usually yoghurt is tied in muslin cloth to drain out all the whey from it. After that sugar and flavorings can be added and mixed to the hung curd to make delicious shrikhand.

Usually I make many verities of  shrikhnad at home. But every time it is not possible to click and share.  Last time I made mango shrikhand which is my all time favorite. Do try strawberry shrikhand , this is equally healthy and yum !!!!

Instructions
  1. Puree the chopped Strawberries with sugar using a mixer grinder.
  2. Pass the puree through a sieve and keep aside.
  3. Take hung curd in a bowl and beat it with cardamom powder.
  4. I used a electric beater. But you can also use a balloon whisk or hand beater.
  5. Whisk till the curd turns smooth.
  6. Add strawberry puree and whisk again till everything well combine.
  7. Pour it in individual bowls or earthen pots (I used small glasses here).
  8. Refrigerate it for an hour.
  9. Serve chilled.
Recipe Notes
  • I used 500 gram thick yogurt here, which gave me 1 cup hung curd.
  • You may use store brought curd or homemade curd for making shrikhnad.
  • Make sure your yogurt is fresh. Never use sour yogurt.
  • To make hung curd take a muslin cloth, spread the cloth on a sieve/ strainer, pour the curd in the cloth. Now bring the ends of the cloth together and hand it on a support to drain the water from the curd.  It may take 3-4 hours for making shrikhand.
