In this hot summer when sun is on full bloom, do you wonder how to beat the scorching summer heat, then answer is lying in your refrigerator. Yes its cucumber. Don’t you pick up some cucumber when buying vegetables? I love to.

Whether I prepare salad or not, I always pick cucumber from the vegetable vendor. Cucumber is a low calorie vegetable which has more nutrients to offer than just water and electrolytes. I read somewhere that cucumber has 95 % water which makes cucumber to stay hydrated, especially during the hot days of summer.

Cucumber helps in reducing waste from the body and reduces skin irritation because of anti inflammatory property found in it. In summer except fruits and vegetables, eat cucumber as much as possible. I thought it couldn’t be any better to have cucumber in a salad form. It is a simple version of salad, which can be prepared in no time and consumed.

Instructions
  1. Place cucumber slices in a wide bowl.
  2. In a bowl whisk together olive oil, lime juice, chili flakes, crushed pepper and garlic.
  3. Add salt, sesame seeds, chopped coriander leaves to the cucumber slices.
  4. Drizzle the prepared solution on the cucumber slices, toss and serve immediately.

  • chill the salad for 30 minutes before serving.
