Mango chia seed pudding
Take chia seeds in a wide bowl. Whisk a little to break the lumps.
Add coconut milk and whisk well for 2 minutes.
Add honey and vanilla mix until incorporated.
Leave this mixture for 30 minutes in room temperature.
Refrigerate this for overnight.
If you don’t have time then 1 hour is enough.
Puree the mangoes using a blender.
In a serving glass spoon put some mango puree first then spoon chia seed mixture.
Repeat the layers.
Garnish with chopped mangoes and a spring of mint.
Alternatively you can mix the mango puree, coconut milk, vanilla, honey and chia seeds are a bowl. mix until incorporated.
Refrigerate the mixture for overnight.
