  1. Take chia seeds in a wide bowl. Whisk a little to break the lumps.
  2. Add coconut milk and whisk well for 2 minutes.
  3. Add honey and vanilla mix until incorporated.
  4. Leave this mixture for 30 minutes in room temperature.
  5. Refrigerate this for overnight.
  6. If you don’t have time then 1 hour is enough.
  7. Puree the mangoes using a blender.
  8. In a serving glass spoon put some mango puree first then spoon chia seed mixture.
  9. Repeat the layers.
  10. Garnish with chopped mangoes and a spring of mint.
  11. Serve chilled.
Recipe Notes
  • Alternatively you can mix the mango puree, coconut milk, vanilla, honey and chia seeds are a bowl. mix until incorporated.
  • Refrigerate the mixture for overnight.
  • Serve chilled.
