Chia seeds pudding is dairy free , sugar free and gluten free. This consists of freshness of topical mangoes combined with coconut milk, honey and vanilla. This pudding has enough protein and nutrients to be a quick and ongoing meal any time in a day.

Chia seeds pudding are lovely looking and the best thing is, this dessert can be customize in various way. The flavor, sweetener and the texture can be customized in many ways, depending on the flavor profile you want and what’s on the season. Strawberry, blueberry, bananas, raspberries, chocolate can be used. Coconut milk can be replaced with almond milk or simple cow milk.

This pudding can be served in individual mason jars or small glasses. soak the chia seeds at night if you are planning to have it for breakfast. Don’t worry if you forget to soak at night, soak chia seeds for ½ an hour. These power package small seeds take 15-20 minutes to obtain a lovely jelly form when mixed with water.  Add chopped fruits if you like to have some small bites of fruits in your mouth.

Instructions
  1. Take chia seeds in a wide bowl. Whisk a little to break the lumps.
  2. Add coconut milk and whisk well for 2 minutes.
  3. Add honey and vanilla mix until incorporated.
  4. Leave this mixture for 30 minutes in room temperature.
  5. Refrigerate this for overnight.
  6. If you don’t have time then 1 hour is enough.
  7. Puree the mangoes using a blender.
  8. In a serving glass spoon put some mango puree first then spoon chia seed mixture.
  9. Repeat the layers.
  10. Garnish with chopped mangoes and a spring of mint.
  11. Serve chilled.
Recipe Notes
  • Alternatively you can mix the mango puree, coconut milk, vanilla, honey and chia seeds are a bowl. mix until incorporated.
  • Refrigerate the mixture for overnight.
  • Serve chilled.
