  1. Peel the bottle gourd , cut into pieces and grate it using a fine grater.
  2. Squeeze out excess water by pressing a handful of grated louki in between your palm.
  3. Heat ghee in a heavy bottom pan.
  4. Fry cashew nuts, raisins for few seconds, remove them and keep and keep aside.
  5. Now add grated , squeezed louki and fry them for 3-4 minutes in low flame.
  6. Till the louki seems dry and all water evaporate.
  7. Now pour milk , stir once and let in cook for 15 -20 minutes in very low flame.
  8. Stir occasionally.
  9. Finally add cardamom powder, Sugar and fried nuts (keep few nuts for garnishing).
  10. Switch off the flame .
  11. Cool down the kheer completely.
  12. Add salt, stir once and pour rose water.
  13. Garnish the delicious kheer with nuts and dried rose petals .
  14. Chill the kheer for 30 minutes before serving.
  15. Enjoy !!!
Recipe Notes
  • I didn’t add fried nuts in kheer as I like to have kheer in this way.
  • Saffron enhance the taste of Kheer so please do add if you have .
  • Don’t skip adding Rose water and salt.
  • Salt can be added with grated bottle gourd while frying them.
