Instructions
  1. In a bowl mix tutti fruit and blueberry with little flour and keep aside.
  2. Grease an 8” loaf with oil and dust with flour.
  3. Preheat the oven at 180c for 10 minutes.
  4. Sieve flour, salt and baking powder all together.
  5. Beat oil and sugar in medium speed till sugar melts.
  6. Add essence, curd , milk, lemon zest and beat for a minute more.
  7. Gradually add flour, coconut powder and mix in low speed carefully. Avoid overbeating.
  8. Add lemon juice and mix for a second.
  9. Add flour coated blueberry n tutti frutti .Fold gently.
  10. Pour the cake batter on the greased tin, tap a little to release air bubbles.
  11. Bake in preheated oven for 40 minutes.
  12. Check with a tooth pick, it should come out clean if cake is fully done.
Recipe Notes

Replacements:

  • Place few blueberries on top.
  • Can avoid adding tutti fruit.
  • Almonds can be added instead of tutti frutti.
  • Instead of curd, add 2 large eggs,
  • Vanilla essence can be added instead of lemon essence.
