Can you guess!!! What I am going to share today? if you are following me on Instagram you must be knowing about the guessing game. I usually post a picture on insta before 2 days and tell all to guess the dish.  Well this dish looks like payas / kheer , yes you are right. This is a kheer recipe, but not an ordinary dish, this is a dish from the state of odisha and is known as Chenna payas.

Everyone must be knowing that maximum desserts of Odisha are Milk based. I have already shared a few of them like Rasabali & Kheer sagar . In month of June a Special occasion is coming Called Raja. On which We prepare many types of Pitha(dumplings) & Mitha (sweets). Raja is a 3 days long festival and celebrated with traditional dishes.

These 3 days are declared as Government Holidays in Odisha. All schools and colleges reopen after this festival only. Poda pitha is the main attraction of this festival. This Burnt cake a.k.a Poda Pitha made only on the occasion of Raja.  Dahi vada & aloo dum are also the point of attraction of this festival .People enjoy Raja by wearing new clothes have traditional dishes and go for movie and spend quality time with family.

Let’s talk about this dish. Chenna means cottage cheese and payas means thickened milk. This dish is quite similar to Kheer Sagar,  I shared last year. But these 2 have their own taste and texture. Here crumbled chenna is used. Chenna used in this recipe is freshly made, which gives a soft, melts in mouth taste and flavored with freshly ground cardamom pods. Usually this payas is served without any dry fruit, as it kills the soft taste of chenna. But nowadays people like to add cashew , raisins fried in ghee in chenna payas, which is quite acceptable.

Instructions
  1. First boil ½ litre of milk in medium flame, stirring occasionally. When milk comes to boil simmer the flame .
  2. Combine water & vinegar in a small bowl.
  3. Using a spoon gradually add this solution to the boiled milk and stir. Within few seconds the milk will be curdled and whey will be separated.
  4. Now strain the chenna using a muslin cloth and reserve the whey. Make a knot and tie the cloth at a height, somewhere in the kitchen and allow the excess whey separated from the chenna.
  5. In an another flame, boil the rest of the milk using a heavy bottom pan. Let it boil, stir occasionally.
  6. Once boil, lower the flame and leave it for 10- 15 minutes. Let it to reduce to half the quantity.
  7. Mean while check the chenna . But don’t press the muslin cloth to remove excess water.
  8. Take it out from the cloth and crumble it with your palm. Else you can knead the chenna with the heel of your palm to soften it. Then crumble it.
  9. Add ground cardamom pods , sugar and crumbled chenna to the thickening milk. Boil for 5 minutes more.
  10. Switch off the gas, scrape of the excess cream that is collected in edges of the pan.
  11. Pour in a bowl and rest for 2 hours. you can chill the payas for better taste.
  12. While serving fry some nuts in ghee or chop the nuts and mix with the payas. Serve chilled.
