Traditionally tamarind chutney is made out of dried tamarind, jaggery & dates.

It’s a must have chutney . whether you are preparing Dahi puri, Ragada patties or Dahi vada you will definitely need this chutney. I got raw tamarind from a tribal lady. I finished all the tamarind by making Charu, Raw chutney. But I got this idea when I was looking for date tamarind chutney recipe and I had no dried tamarind with me, so I prepare this with raw one. No different in taste,as usual lip smacking.

But the recipe may slightly vary as per the sourness of the tamarind. It can be adjusted by adding more or less jaggery. I prepared the tamarind extract by boiling 4-5no of tamarind with half cup of water, on a day before. I simply crushed it with hand and strained the juice. Its quite simple.

 

INGREDIENTS ::

Tamarind extract – 1 cup

Chopped Jaggery –1 cup

Dry chillies – 2 no

Dates – ½ cup

Black salt- 1/4th tsp

Chat masala – 1/4th tsp

Roasted cumin powder – ½ tsp

Roasted sounf powder – ½ tsp

 

METHOD OF PREPARATION ::

Soak the dates with dry red chilies over night.

In morning, grind the dates with chillies, with the soaked water.

Strain it, reserve the extract.

In a pan combine tamarind extract & dates extract.

Boil it 4-5 minutes. Add jaggery and continue cooking.

Cook till the mixture turns thick.

Switch off the flame add all the masalas and its done.
