Here I am back with another sweet dish of Odisha. As i told before that Odisha own  a  lot of finger licking recipes, but they are like hidden treasure. still the dishes need to get some attention of people. However who has come to odisha and tasted sweet dishes once, they can never forgot  the taste .Not only sweet ,savoury  dishes are also very simple and tantalizing.

The specialty of Odisha is about the temple bhogs mostly of the Lord Jagannath temple in Puri. Kendrapada,a district of odisha ,which is very famous for Rasabali. The Rasabali in odisha is known as  ‘Kendrapada Rasabali’. Rasabali is offered to Baladevjew and originated in the Baladevjew temple of Kendrapada.

It can be explained as Cottage cheese patties in reduced sweetened milk or in simple word it is called Rasabali. It is a famous sweet dish from the state of odisha. Yes, its  one of the chappan bhogs (56 types of Prasad) that is offered to Lord Jagannath during worship.

This is a finger licking dish and has an extra ordinary flavor. The main thing you have to consider is the cottage cheese patties. the patties can be made out of cottage cheese or fresh chenna can also be used.The patties are soft and it is dipped in sweetened reduced milk.

Instructions
  1. Heat the oil in a big wok.
  2. Mash the cottage cheese with your hand. Add semolina,flour & cardamom powder to it. Rub well
  3. Now start kneading the entire mixture with your palm till its becomes soft and palm looks oily.
  4. Add powder sugar and eno ,mix well.
  5. Add condensed milk mix well.
  6. Grease your palm in little oil and make equal roundels. Flatten a bit and deep fry the patties.
  7. Deep fry these till both sides turns golden brown in colour.
  8. Take out the patties and keep on absorbent paper.
  9. Pour the milk into a heavy bottomed pan and boil it.
  10. Stir continuously ,so that it won’t stick to the bottom of pan.
  11. When it is reduced by 3/4th add powder cashew nut,almond powder, powdered cardamom and sugar. Mix well.
  12. Boil for 2-3 minutes more and switch off the gas.
  13. Wait till it cool a bit.
  14. Add the fried patties to it and leave it for one day.
  15. Enjoy the delicious sweet dish on next day.
Recipe Notes
  1. After kneading and before frying if the mixture seems too watery add little more semolina to adjust the consistency.
  2. After dipping the patties in reduced milk ,the patties will expand a bit.
  3. if you don’t want to add eno (Indian name of fruit salt) you can add little baking powder .
