Nowadays things  aren’t that healthy when purchased from the market. It is always best to make everything at home. Atleast you know that your near and dear ones are not having anything unhealthy. That’s why baking at home is a good option rather than buying some unhealthy dishes from local bakery shop.

It seems to be a lengthy preparation but actually it is not. Though it is little time consuming to make but the taste and crunchiness is worth the effort. So let’s learn how to prepare pillow soft masala bun at home .

Instructions
  1. We will make the dough first. For that we need to proof the yeast.
  2. Instant yeast doesn’t require to be proofed but I always do to ensure the better result.
  3. To the Luke warm milk add sugar and yeast, whip so that sugar dissolves completely.
  4. Keep this solution in a warm place, leave for 10 minutes for proofing.
  5. Sieve the flour with salt. Add proofed yeast solution and mix well.
  6. Now add ½ cup of Luke warm water , knead into a soft dough.
  7. Add 1 tbsp of oil and 2 tbsp water (If required ) and knead again for 10 minutes.
  8. The more you knead the softer buns you get. So kneading and stretching is very important.
  9. Finally add remaining oil, knead for 1-2 minutes more. Dough will be soft and non sticky.
  10. Transfer the dough to a big , greased bowl, grease oil over the dough, cover the bowl, rest in a warm place.
  11. Leave it for 1 – 2 hours till the dough became double in size.
  12. Now we will make stuffing.
  13. Boil potato , peel and cut into small cubes.
  14. Finely Chop green chilies a d garlic.
  15. Chop the onion into medium cubes.
  16. Heat oil in a pan. Add mustard seed to the hot oil , let it splutter.
  17. Add curry leaves , green chilies and onion.
  18. Fry till onion turns translucent , add garlic and saute for few second more.
  19. Add all the dry masalas except garam masala , saute continuously otherwise spices may get burnt. Sprinkle little water if required.
  20. Add chopped potatoes and mix well.
  21. Sprinkle little water, Cover it for few seconds, let the potato absorb all the masalas.
  22. Finally sprinkle garam masala, mix and switch off the flame.
  23. Let the stuffing be cool.
  24. Check the dough . it will have risen to a considerable extent.
  25. Punch the dough , sprinkle tbsp of flour and take out the dough.
  26. Knead it again onto a floured surface.
  27. Divide into 8 parts. Now roll and flatten out each circle in your palm, fill in the filling like you would in a stuffed paratha.
  28. Bring the edges and seal it, slightly flatten it again.
  29. Repeat this step with other balls also.
  30. Place then in a greased trey, brush each bun with oil.
  31. Cover it again and leave for 30-45 minutes.
  32. Preheat the oven at 180c for 10 minutes.
  33. After the second rise , brush the buns with milk, sprinkle sesame seeds on top(I forgot to do that).
  34. Bake it for 15-20 minutes till top seems light golden brown.
  35. After done remove from oven , brush with butter for the shine.
  36. Serve warm.
Recipe Notes
  • water quantity depends on the quality of the flour. so adjust the water quantity as per the requirement.
  • you may need more or less water  while kneading the dough. so don't put all the water as mentioned above.
  • Gradually add water and knead the dough.you can use your favorite veggies as stuffing.
  • You may use coriander leaves or dry herbs as topping.
