JAGGERY BISCUITS

jaggery cookies or can be called as soft jaggery biscuits.

It’s the time for jingle bell …jingle bell. Yes Christmas time !!! And perfect time for baking. Apart from ginger bread, ginger cookies, sugar cookies, it’s a different recipe using sugar and jaggery.

Don’t go with the shapes, any shape can be given to these cookies.

These cookies can also be served with a cup of tea or coffee.

These are the soft biscuits using jaggery and sugar. For flavor I ve used ginger powder ,cloves and peppers.

INGREDIENTS ::

Refined flour – 3 cups

Sugar- ½ cup

Jaggery – 3/4th cup

Warm water – 10 tbsp

Oil – 10 tbsp

Baking soda – 1 tsp

Dry ginger powder – 1 tsp

Whole Peppers – 12 no

Cloves – 4 no

Salt – ½ tsp

 

 

METHOD OF PREPARATION::

In a bowl sieve all purpose flour, salt, baking soda, powdered ginger, powdered peppers and powdered cloves.

Sieve these for 3 times.

Powder the sugar and mix it with jaggery and warm water.

Beat it till jaggery melts completely.

Add oil and mix again.

Gradually add dry ingredients and mix it nicely.

It will form sticky dough. Keep it in a bowl.

Now refrigerate it for 1 hour.

After an hour preheat the oven at 190c for 10 minutes.

Take the dough out of bowl and knead it well.

On a floured surface Roll out the dough about ½” thick.

Cut into desire shape and place in a greased baking tray.

And bake it for 8-10 minutes at 190c till tops looks slightly pink.

Let it cool and continue baking rest of the cookies.

Cool the cookies completely and store in a air tight container.

Put a piece of bread to keep the biscuits soft N moist.
