Condensed milk is just reduction of milk and sugar until its thickens.
Nowadays Condensed milk is the important part of preparing
cooking and baking. Using condensed milk so many varieties of dishes can be prepared.
I always prefer homemade condense milk because of its preservative free, hygienic and cheaper than market.
In many of my cake recipes i have used condensed milk because of my daughter has allergic to egg and curd.
The ingredients used to make condensed milk is easily available at home. You dont need to buy any extra ingredients. Its easy to made so why not to make at home and make it more healthy.
Lets make it at home.
- Milk 3 cup
- Sugar 1/2 cup +2 tbsp
- Soda bi carbonate 1/8th tsp
METHOD OF PREPARATION :
Boil milk in a heavy bottom pan. Let it boil for sometime in low flame.
Switch off the flame and keep the milk overnight in refrigerator.
In morning carefully remove the cream from the milk.
Again boil milk with sugar in a heavy bottom pan. Stir continuously.don’t let the milk stick to the bottom of the pan.
After milk started boiling, lower the flame and let it boil for sometime more.
Add soda and stir. It will be foamy. Don’t worry, keep stirring. Keep it in medium low flame.
Stir till milk is thicken & reduced by half.
The colour of the milk will be changed and it will be yellowish in colour.
Don’t overcook because condense milk will be thick after cooling down.
Switch off the flame and let it be cool. Transfer it to a clean bottle and refrigerate it.
- its not compulsory to refrigerator the milk overnight .but it will b helpful for collecting the cream.
- I have added soda bi carbonate for keeping the condensed milk for long time.
- for make the condense milk sweeter you can substitute the granulate sugar with honey,brown sugar or Jaggery.
