Guder phirni (phirni with jaggery)

Not only desserts bring smile to everyone’s face but they are also offered to god as a Prasad.

It’s the time of navratri..people make lot of desserts for prasad purpose.

we,at home, start celebrating durga pujo from the sixth day of navratri.its the day when a mother keep fasting for the health and wealth of her baby.

After sosthi pujo , lot of verity of dishes are prepared at home like loochi with some curry item followed by a dessert.i made this phirni specially for my mother in law ,and she enjoyed it a lot.

INGREDIENTS ::

Basmati rice – 5tbsp

Full fat milk- 1 liter

Jaggery – ½ cup

Cardamom powder – 1/2 tsp

Dry fruits  – 1/4th cup

(cashew nuts, pistachio, raisins)

Ghee – 1 tbsp

 

METHOD OF PREPARATION :

Wash and soak the basmati rice in enough water for ½ an hour.

After half an hour drain the rice completely.

Spread it on a kitchen towel and leave it till it’s completely dry.

Grind it coarsely and make a grainy rice flour like sooji.

Heat a pan add ghee into it.

When ghee is hot fry the cashew and raisins ,fry a little .Take it out and keep aside.

Take heavy bottom pan pour milk and boil it.

Once it comes to boiling point lower the flame and stir continuously.

Add cardamom powder in between and continue boiling.

Reduce the milk by half.

Now comes the tricky part of this dish.

Gradually add prepared rice flour and stir continuously ,avoid creating lumps.

You may take someone’s help who will put the rice flour and you need to stir continuously. So that no lumps will be formed.

Stir continuously till the rice flour cooked and its reaches to a thick consistency.

Now add jaggery and stir to mix well.

Switch off the flame and add chopped nuts.

Mix once and pour this phirni into individual bowls.

Chill for an hour and serve.

NOTES ::

jaggery quantity can be adjusted as per the taste.

few kesar strands can be added with it.

you can add nuts of your choice.
