EGGPLANT PIZZA

 

 

 

Today pizza is one of the most popular foods in every part of the world. The fame and recognition came from the many famous international restaurants which spread this dish to the all remote corners of the world. They worked a lot to make the pizzas tasty and yummy. Apart from restaurants, the pizzas can be made at home with the same taste and same texture.

 

 

Just hearing the word pizza brings a smile on the face. What’s there not to love about the cheesy, delicious gift made by your mom or granny.

 

 

But the best part is the fact that the pizzas are super customization. The dough can be made in variety of ways and the topping too. Pizzas can be made in any shape and any topping can be used. Topping may be veg or non veg. When the word topping comes , we know sky is our limit.

 

 

Pizzas may be a take out staple in many households and making pizza dough is not only time taking but it requires lot of patience. So here is an option to make flour less pizza, if you are bored with your everyday pizza.

If you are looking for some jiffy dinner ideas then the eggplant pizza is perfect for your dinner menu. These are great light dinner food. It is flour less, gluten free and have a delicious taste.

 

 

Believe me, these are really really good and absolutely delicious in taste !! it is very filling and satisfying. These  are quick, low carbs pizzas which can be a great meal for your kids tiffin box. If you have sauce and toppings ready with you , then these delicacies can be prepared within 30  minutes.

INGREDIENTS ::

Eggplant – 1 big no

Pizza sauce – ½ cup

Mozzarella cheese – ½ cup

Italian seasoning – 1 tsp

Olive oil – 1 tbsp

Chilli flakes – 1 tsp

Salt –  ½ tsp

 

For topping ::

Onion – ¼ th no of whole

Capsicum – 4th no

Baby corn – 2 no

Coriander leaves – a few

 

 

 

METHOD OF PREPARATION ::

Wash and pat dry the eggplant with a kitchen napkin.

Slice the eggplants into ¾” thick slices.

Sprinkle salt on each sides of eggplant slices and lay them on a paper towel.

Leave them for 30 minutes.

After 30 minute blot both sides well with an another kitchen towel. It makes them sweat out the bitterness & then they taste yummy.

Preheat the oven at 190c.

Brush each sides of eggplant with olive oil.

Sprinkle both sides with salt and half of the Italian seasoning .

Lay these slices on a greased sheet/tin and bake them for 20-25 minutes in middle rack.

Bake till they turn little soft and little brown in colour.

Take out from oven, spoon some pizza sauce on top of eggplant slices and spread evenly.

Then add cheese and your topping. Sprinkle rest of Italian seasoning on top.

Return the baking sheet to the oven & turn on the grill mode.

Grill for 2-3 minutes more till the cheese melts.

You can grill for 1-2 minutes more if you like some extra crispy topping.

Sprinkle some chilli flakes and its done !!!

Enjoy the guilt free pizzas . These pizzas are little more tangy than your regular pizza crust.
